Lea Michele’s Favorite Recipe: Make the Actress’ Radicchio and Parmesan Pizza

The You First: Journal Your Way to Your Best Life author, 29, shared one of her favorite pizza recipes with Us Weekly. “Anything that can be eaten family style is a hit!” she said. Radicchio and Parmesan Pizza With Sunny-Side Up Egg

Ingredients:

1 12-inch store-bought whole wheat pizza shell

1 head (about 4 cups) radicchio, finely shaved and fully dried

2 tbsp fresh lemon juice

1 tsp kosher salt

2 tbsp plus 1 tsp olive oil

1/2 cup shaved Parmesan cheese

1 egg

1 tsp truffle oil (optional)

Black pepper

Directions:

1. Preheat the oven to 400 degrees. Prepare the crust according to directions. Place radicchio, lemon juice, salt, and 2 tablespoons of oil in a large zip-top bag. Shake until radicchio is coated.

2. Place radicchio mixture on crust. Bake until radicchio is crispy, about 10 minutes. Sprinkle on cheese. Return to oven. Bake until cheese melts, about 2 minutes.

3. In a skillet over medium heat, heat the remaining 1 teaspoon of oil. Break the egg and cook 2 minutes (yolk should be a bit runny).

4. Place the egg on top of the pizza. Bake 2 more minutes. Drizzle with truffle oil. Garnish with pepper.
